Tomato & Avocado Toast


I am devoting a blog post to this easy summer recipe because I have eaten it four times in the past four days. Yup, daily.  The tomatoes at the farmer's markets and grocery stores are juicy, red and insanely delicious right now, and avocados, well, avocados are always a favorite. I can't get enough of seasonal produce.

Generally, I toast either an English muffin or a slice of hearty bread (whatever is in the bread drawer really) and top it with slices of avocado, tomato and (sometimes) cucumber. A little sprinkle of feta cheese, a dash of black pepper and you've got yourself a delicious and healthy light lunch or afternoon snack. Yum!

  1. Mmmm! I just recently discovered a love for avocado (why didn't anyone tell me it tasted like veggie butter?!) and this looks like the most amazing breakfast!

  2. hahaha, it does taste a bit like veggie butter! Definitely try this, I can't get enough of it (clearly).
